The New York Strip, a cut of steak from the short loin of the cow, is also known as the Kansas City Strip and as the Delmonico Steak (among many other names). Some reports claim it originated in Kansas City in the 1800’s and was rebranded by New York City’s first fine dining restaurant, Delmonico’s in 1837, evolving later to be called the New York Strip. Delmonico’s claims they pioneered the cut. The battle over its origins may go on forever.
