The turnip is a brassica cruciferous vegetable. It is generally round-ish in shape- white at one end, and purple where the stem and leaves start to emerge. Compared to its relatives broccoli, cabbage, and kale (among others), it has substantially more glucosinolate (phytonutrient with anti-cancer properties), and about 4 times as much calcium in its greens. They are also very high in Vitamins K and C. The turnip root is very rich in Vitamin C, a powerful antioxidant which also required by the body to synthesize collagen.
Store turnips in a veggie drawer in your refrigerator. If you buy turnips with greens still attached (not these – QP411/412), remove them and store root and greens in separate bags in the refrigerator. When ready to prepare, it is not necessary to peel the skin of young turnip roots. But, the skin of more developed turnips becomes tough. You can steam or boil turnips, but they are most wonderful raw!!
