Crystals in your Joe's Sugar Free? Dang! We hate when this happens, but it does happen sometimes. It's the erythritol. It's similar to making rock candy from sugar. If this happens, it's usually in colder storage temperatures--below 45 degrees F. As you know, we avoid adding gums, preservatives, or stabilizers which makes our product more vulnerable to crystallization. Joe chose each ingredient in our sugar-free formulations based on overall taste and not what was easiest to work with, so, we have a great-tasting sugar-free syrup which sometimes crystallizes in cooler temperatures. It's not a food safety issue at all. Please continue to enjoy the syrup!
