Sweet Potatoes are often confused with yams, but they are distinctly different produce of different families. Also, while the cultivation development of Sweet Potatoes was in Central and South America, yams are actually native to Asia and Africa. The Sweet Potato is also only very distantly related to the potato. In actuality, the Sweet Potato is in the same genus as the morning glory!
It is a starchy tuber that varies widely in color, including orange, pink, red, beige, purple, brown, yellow, and white. You can’t always tell from the color of the skin, what the color of the flesh will be. But, generally speaking, the lighter the flesh, the less sweet it is in taste. Our current supply of Sweet Potatoes are light fleshed~
Sweet Potatoes are rich in complex carbohydrates, vitamins and minerals, including beta carotene which is most abundant in the richer orange, brown and red Sweet Potatoes. For best absorption of your Sweet Potato beta carotene, be sure to include a little bit of fat- that helps with the beta carotene bio-availability and uptake.
As for cooking, the nutrition in the Sweet Potato is actually best unlocked by steaming and boiling. Then, just add a little pat of butter and some cinnamon or nutmeg, and you have a wonderful and nutritious treat!

Sweet Potatoes like to be stored in a moderately cool dark place, ideal storage temp is 55-60 degrees, so not in the refrigerator or your potatoes will go bad fast
