Shredded Mexican Blend, Organic

Our Rumiano Organic Shredded Mexican Blend is a combination of our Monterey Jack, Pepper Jack, and Cheddar Cheese. It has a creamy and slightly tangy flavor witha  smooth, buttery texture. This cheese is white in color and melts well, making it ideal for adding a rich, cheesy flavor to dishes like tacos, quesadillas, and enchiladas. Mexican blend cheese is also often used as a topping for nachos and other Tex-Mex dishes, adding a deliciously cheesy finish.

We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
