Sarsaparilla root is a herb commonly used to flavor drinks, such as root beer. It has a an earthy, slightly bitter flavor and a sweet vanilla like scent. The plant is a slender climbing vine with twining woody stems and reddish-brown bark. The leaves are opposite, smooth, shiny and firm. The root is long, winding, rigid, cylindrical and a little branched.
