Crimini mushrooms grow wild across the grasslands of our country, and in many places around the world. They are “button” mushrooms and are the immature version of the Portobella. In addition to their exquisite and delicate taste, Crimini mushrooms are known for their anti-oxidant and cancer-fighting properties. They are particularly rich in selenium, B’s 2, 3 & 5, as well as copper, potassium and phosphorus; they are low in sodium, and very low in saturated fat and cholesterol.
It is very important to keep Criminis stored at a cool temperature- roughly 38-42 degrees, as their healthful compounds degrade quickly at higher temperatures. For that reason, it is also beneficial to only cook or sauté for a few minutes before adding to a dish or eating. Better yet, wash them, pat them dry with a clean towel, and eat!
