Our Rumiano Organic Monterey Jack is a pale yellow, semi-hard cheese with a mild, buttery flavor with a subtle tang. It is smooth and creamy in texture and has a slightly elastic consistency. This cheese is versatile and can be used in many dishes, from sandwhiches and burgers to tacos and salads. It is also a popular cheese for melting due to its smooth and creamy texture. Monterey Jack cheese pairs well with other mild cheeses, as well as fruits and vegetables, and is often used in Mexican and American cuisine.
At Rumiano Cheese, we are proud to say that our dairies go the extra mile for grass-fed milk production. The mild Northwestern coast of California has prime weather for grazing and pasture time. Year-round access to pastures and naturally growing coastal grasses are imperative to our definition of grass-fed feeding. Open pasture time and natural grazing allow the cows to roam freely make for high-quality milk. Haylage and silage are used for feed when the weather is too wet and cold for pasture time, which is seldom. The grass-feeding methodology benefits the animals and consumers by helping produce healthy and humane dairy products.
Grass-fed and apsture-raised cows allowed to move freely and eat a natural diversified diet are not only much healthier, but we believe they seem much happier too! Small-scale farmers who have taken the time to get to know their cows (many even give them names) recognize that cows are social beings who are happiest when they have room to roam and socialize with others in their herd, which in the end produces a much healthier end product.

In addition to using all milk components, Rumiano Cheese strives to be sustainable in all other aspects of its cheese production. Our goal is to achieve a zero-waste target by recycling water, cardboard, plastic and wood, and reducing its paper usage by going digital. All the dairies providing mil to Rumiano are within a 100-mile radius, reducing the carbon dioxide output from our milk trucks to the environment and limiting the use of fossil fuels.
Like so many others, Fred, John, and Richard Rumiano emigrated from Italy just after the turn of the last century. After jobs from gold mines, shipyards, and liquor, they settled near Willows in 1919 and began the dairy operation. When Italian Hard Cheese wasn't available after World War I, the creation of the Monterey Dry Jack Cheese launched the company mostly serving the regional market and San Francisco

We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
