Khorasan wheat is a unique ancient grain with a slightly sweet, buttery flavor that makes a palate-pleasing pasta! Higher in antioxidants than salmon and blueberries, this highly digestible grain is safe for 70% of people who cannot eat wheat, thanks to the unique type of gluten it contains. Khorasan also has 30% more protein and is richer in potassium, magnesium, zinc, and vitamin E than standard wheat. This type of grain was rediscovered in Egyptian tombs, and remains in its original form from five thousand years ago, without hybridization or genetic modification.
