Azure Market lima beans get their name from Lima, the capital city of Peru, and they appear in ancient artwork by the Moche culture, which flourished in that region around 1–800 CE. There are two main strains of lima beans: a larger variety which probably originated in the western Andes, usually simply called the lima bean, and a smaller variety likely hailing from the neotropical lowlands of of Mesoamerica and known variously as the sieva bean, butter bean, or baby/junior lima bean.
Our lima beans, like many legumes, are packed full of nutrients, minerals, and vitamins, including soluble fiber, iron, copper, folate (vitamin B9), phosphorus, magnesium, molybdenum, thiamine (vitamin B1), potassium, calcium, and vitamin B6. That’s a lot of nutrition in such a small package!
This versatile bean is a staple ingredient in many Indian curries and features in the famous and delicious Valencian dish paella. Mild in flavor and smooth in texture, our lima beans taste great in soups and casseroles or paired with rice or your favorite grain. You can also mix them with corn and other vegetables to make a Native American dish called succotash. And if you’re feeling extra fancy, try whipping up a buttery pie crust to make a succotash pot pie!
