Azure Market Organics Spanish brown lentils are a staple legume for every household. Lentils have been cultivated since Biblical times, and the Spanish brown variety was common in Spain’s Pyrenees region. It is a bit firmer than other varieties and holds its shape when cooked. 

Lentils are high in protein and fiber—in fact, they have one of the highest ratios of protein to food energy of any plant (second only to the soybean)! That alone makes them a worthwhile addition to your pantry, but it’s not all they offer; they’re also packed with iron, zinc, folate, potassium, and magnesium, making them a fantastic source of basic nutrients and vital minerals.
