Azure Market Organics harvest gold lentils are a beautiful golden-yellow variety of the nutritious legume family. Harvest gold lentils are decorticated, which means the skins have been removed, leaving behind just the soft center. This makes them well-suited for more delicate dishes including soups and dips. Like all lentils, the harvest gold variety is high in protein and fiber and a source of iron and potassium.

Because they’re decorticated, our organic harvest gold lentils cook down easily to a delicious golden-yellow puree, which you can add to cookies and cakes to boost moisture and protein content, or spoon over bread, rice, or potatoes. They also make a lovely and lively-looking side dish seasoned with a bit of oil, balsamic, and goat cheese—or sprinkled with salt and pepper and fresh chives. Harvest gold lentils bring a bright, cheery color to curries and dal recipes. They cook quickly, so you can enjoy them in under 15 minutes!
