They may look similar, but Azure Market Organics French green lentils aren’t quite the same as regular green lentils. Although their smaller size is the most obvious difference, what really sets French green lentils apart is their nutty, peppery flavor and thicker skin, which helps them hold their shape better than most other lentils during cooking.

French green lentils are a tasty and convenient source of protein, iron, and fiber. In fact, just a quarter cup of lentils provides 50% of the daily value for fiber, making them a great addition to your family’s diet!

Here at Azure, we love these for recipes where intact lentils are preferable to a mush or puree, like salads or light soups. Their thicker skin also slightly increases cooking time, but they’re still ready in about 40 minutes, making them a great choice for weekday dinners.
