To prepare as a tea, pour 1 c. boiling water over 1 tsp of lemongrass. Cover and steep for 3-5 minutes, strain, and serve immediately.
Lemongrass is a sweet-scented grass that grows up to five feet tall. Its bulbous stems grow upwards to form long, pointed leaf blades. When sliced fresh, the stalks show concentric, sheathed leaves. The lower four to six inches of the leek-like stalk have the most vibrant flavor. The upper portion of the leaf has a fold along its center ridge.
