Kim Lofgren and Shannon Tortolano of Hood River, Ore., have cracked the code in the bustling new world of kombucha brewing.

At One Breath Beverage Company, they’ve borrowed from the wine industry and struck a perfect balance of flavor and nutrition by combining the traditional notes of kombucha with the light, bubbly benefits of kefir water.

Both kombucha and kefir water are naturally fermented, live, raw drinks that are teaming with probiotics. At One Breath, they blend them in French oak wine barrels recycled from a nearby vineyard.

“Scoby thrives in a wood environment,” Tortolano said. “Plus, the old oak barrels help us achieve a unique flavor profile. Not only that, we use many ingredients that have been used for centuries in traditional medicine. It’s what we like to call a living elixir that nourishes body and spirit.”
