Add some flair to your salad and extra nutrition too with slices of fresh kiwi! The little green-fleshed fruit, speckled with black seeds is tangy sweet and an excellent source of Vitamin C. In fact, bite for bite, it equals the orange. Kiwis are also a great source of potassium and fiber.
Kiwifruit, otherwise known as the Chinese Gooseberry, is a native of Southern China. It was exported to New Zealand in the early 1900's where it was extensively cultivated and marketed. Kiwi is quite hardy and is now grown around the world.
Kiwi is sweetest when fully ripe. If it "gives" a little bit when you gently depress the skin with your finger, it is ready to eat. If it is not quite ripe, you can leave it on your counter for a couple of days, or put in a paper bag with an apple or banana. They both emit ethylene, a natural hydrocarbon and plant hormone, which hastens ripening. Ripe kiwifruit can be stored in the refrigerator.
