Einkorn is the original wheat, genetically pure and just as nature intended. It is quickly becoming the wheat of choice among the gluten sensitive due to its very weak gluten. Crafted in small batches by passionate Italian artisan bakers using einkorn, these Italian-style checkerboard cookies are lightly sweetened and completely satisfying, without being overly rich. Patchworks of chocolate and vanilla shortbread are perfect on their own, or dipped into your morning coffee or afternoon tea.

We created our line of einkorn cookies because we wanted those with gluten sensitivity to be able to enjoy a sweet treat. We use organic ingredients like sustainably grown organic palm fruit oil, organic cocoa and organic einkorn grown on smallm remote famrs throughout Northern Italy. Our artisan bakers in Italy pay careful attention to each batch of cookies to ensure the highest quality cookies.
