Chicory root powder comes from the typically bright-blue hued flowered perennial herb of the Aster family commonly found growing along hedgerows, fields, and roadsides. Its root, roasted and boiled, has long been used as a substitute for coffee, or as a flavorful addition to coffee blends. It is a natural source of inulin, which has a sweetness, and reduces bitterness of coffee—with no caffeine.
