Carrots hardly need a description for they are well known and loved by even the youngest children all over the world. And carrots' benefits are legendary. Carrot roots have a crunchy texture and a sweet and minty aromatic taste.

Carrots are hardy vegetables that will keep longer than many others if stored properly. Store them in the coolest part of the refrigerator in a plastic bag or wrapped in a paper towel. Carrots should be stored away from apples, pears, potatoes and other fruits and vegetables that produce ethylene gas as it will cause the carrots to become bitter.

Generally, the #1 Carrots are a straighter, more uniform-sized carrot used fresh on the dinner table, while #2 Carrots, although sometimes odd-sized or odd-shaped, are often juicier and therefore more often used for juicing.  Both #1 and #2 carrots range in size from 7-11 inches in length.
