We support local, sustainable family-owned agriculture by partnering with our neighboring goat dairy. The herd feeds seasonally on pasture expressly planted for their benefit.

Sierra Nevada Cheese Company’s raw milk cheeses showcase the complex bouquet of flavor resulting from naturally-occurring healthy microorganisms present in our fresh milk. Using milk in a raw state preserves its full, original nutritional value. Seasonal variations highlighted by raw milk accentuate a diverse range of flavors and positively enhance our artisan cheeses.

Our Cheddar Caprae Raw Milk cheese variety boasts a creamy texture and is pleasantly sharp.

If an animal product is not Certified Organic or non-GMO verified, the animal may have been fed products that weren’t Certified Organic and weren’t non-GMO verified.

If this product is 1-2 pounds, the base weight is 1 pound. The price displayed here would be for a 1 lb item only. The displayed price, divided by the base weight, is the price per pound. Since random weight item prices vary, and will vary for each customer, we are not able to display all prices. MRNA Vaccine & Chymosin “Vegetable Enzyme” Statement: at Sierra Nevada Cheese we do not use any mRNA vaccines in our herds. Chymosin, vegetable enzyme is not used in any of our products. A proprietary microbial coagulant derived from the fungi Rhizomucor miehei (also known as Mucor miehei) is used. This species of fungus is commercially used to produce enzymes that effectively curds milk for cheese production. This enzyme is fully approved for organic cheese production and ensures our Sierra Nevada Cheese remain vegetarian-friendly. This microbial coagulant is not from a GMO source and does not encounter any GMOs during production.
