An old favorite, both because of its flavor and because of its earliness.  You'll be harvesting full sized leaves in a little over a month, and greens can be harvested in just three weeks.  Withstands a lot of adverse conditions including some draught, frost, and heat.  Slow to bolt.  Sow outside in early spring, 3 to 4 weeks before last frost, and successive plantings every 3 weeks.  40 days.
