Azure Market Organics Purple Barley is an heirloom grain that originated in the mountains of Tibet and was brought to the US almost 100 years ago. It was recently rediscovered in a seed vault and is making a comeback today as appreciation for heirloom varieties grows! Heirloom varieties bring diversity to our food supply and are free from genetic modification. They are also valued for their unique flavors, textures, and nutritional benefits. 
 
Our purple barley is lightly pearled to reduce cooking time while preserving the vitamins, minerals, fiber, and anthocyanins needed for a healthy diet. The dark bran still remains on the kernel, making it extremely nutritious and preserving its dark color. Purple barley contains more B vitamins than standard barley, more zinc than lentils, and more fiber than wheat for superior nutrition! 
It is also valued for its beautiful purple coloring, and its nutty and sweet flavor. Purple barley makes a delicious and hearty addition to soups, salads, or pilafs.
