The avocado is informally known as the Alligator Pear, reflecting its shape and the leather-like appearance of its skin. The flesh of the avocado is yellow-green, and has a luscious, buttery consistency with a subtle nutty flavor. Although the creamy rich Haas avocados are generally available throughout the year, they are the most abundant and at their best during the spring and summer in California.
