Legend tells us that udon noodle making was brought to Japan by Chinese Buddhist monks around the 9th century. The Japanese “roll-and-cut” method of handmaking udon creates that famous complex, layered chew from the gradient of firm texture on the outside to soft texture on the inside, and the rough surface that helps broth cling to the noodle.
Eden Foods Udon Noodles are roll-and-cut made in Japan with organic spring wheat flour and slowly air-dried. Udon is known for its thick, chewy, bouncy texture and mild flavor. A great base for Japanese broths or any western style sauce, these noodles are extremely versatile and can be used in stir-fries, soup/stews, noodle salads, and are particularly excellent with olive oil and herbs.
