Azure Market Organics tapioca starch is made from liquid extracted from the crushed roots of the cassava plant. The liquid is evaporated, leaving a white, starchy powder perfect for thickening soups, sauces, gravies, fruit fillings, or glazes—any recipes that call for conventional thickeners like corn starch or wheat starch. You can also use it as a flour substitute in gluten free baking, though it works best when mixed with other flour substitutes.

Organically grown Manioc root (Manihot esculenta) is washed, chopped, and grated. The starch is extracted from the fiber with water and dried in a spray dryer. The dried starch is sifted and packaged in paper bags or woven totes.
