Cannellini Beans, or white kidney beans, are famous for their somewhat “meaty” texture that is creamy, with a neutral, nutty profile. They don’t have an intense earthy flavor like standard red kidney beans and are known for easily absorbing the flavors of whatever they are cooked with.

About Jovial Foods:

Founders of Jovial Foods and Bionaturae, Carla and Rodolfo, were both professionals in the organic food industry when they decided to bring back an ancient form of wheat, the original wheat, called einkorn. It all began when their first child was born. Their baby daughter seemed to always have a rash across her face and was unable to breathe at all through her nose; the lymph nodes behind her ears became hard and big, and her tonsils were enlarged. All of these issues eventually developed into asthma. When the girl was 7, Carla combed her hair and a large bunch of hair came out, and on top of that, she came home from school every day with a terrible headache. Finally a doctor told them that their daughter had gluten sensitivity, but not Celiacs. Carla and Rodolfo went hard into research mode to find a solution so their girl could take pleasure in all the things in life, like bread, pizza, pasta, cookies, and cakes, that everyone else enjoyed and still live a healthy life. In 2007, they discovered the nearly extinct ancient wheat, einkorn, through the work of a group of Italian scientists, and they knew that they had to bring the grain back. Einkorn lacks the gluten proteins that trigger symptoms of gluten sensitivity; its weak gluten makes it easier to digest. Carla and Rodolfo began to grow it and bake with it. Soon their baby girl could breathe again and is in excellent health today. The first bread was made from einkorn. It grew wild in the Fertile Crescent thousands of years ago. Jovial Foods is now the largest grower of einkorn in the world, yet it remains a small, family-owned business, promising to stay that way. The family lives between Connecticut and Italy and because they have such an appreciation for Italian cuisine — generations-old recipes, cherished traditions, and time-honored techniques — they started Bionaturae, the first brand to import 100% organic, traditional Italian products to the U.S. Sadly, today the family carries on the business without their dear beloved wife and mother, Carla, who passed away in May 2021 from a sudden and brief illness.
