Right alongside a succulent bite of watermelon, fresh corn on the cob calls out SUMMER TIME!  Not only is corn a staple of the American BBQ and potluck, it is a valuable source of fiber in our overall diet.  Corn plays a role in maintaining digestive health, and is a good source of Vitamin C, manganese, and many anti-oxidant phytonutrients.

Corn can be stored for a short term in an air-tight container or bag in the refrigerator; keeping the husk on will help preserve freshness.  If you don’t intend to eat it right away, corn also freezes very well, on or off the cob.  If you intend to freeze it, remove the husk and blanch the ears for 8-10 minutes, depending on ear size.
