Air Chill helps inhibit the spread of bacteria by keeping all of the chickens separated, and saves 30,000 gallons of chlorinated water every day. With no water added, the air chilled method keeps the \"real\" chicken flavor and natural juices intact. The air chilled method also produces a better tasting chicken. Unlike conventionally processed chickens Mary’s humanely-raised chicken will have the natural aroma of the fresh chicken, with no water absorbed, and you get the natural flavor of the true chicken. \u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAbout Pitman Family Farm:\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tIn 2002 business at the Pitman Family Farm near Fresno, Calif., took a dramatic, entrepreneurial turn. Up until then, they were supplying turkeys for larger companies that dictated what the birds could eat, how they were to be raised, and when they could go to market. \u003c\/p\u003e\r\n\u003cp\u003e\r\n\t“Their decision to not do business with us opened the door,” said David Pitman. “We wanted to do it our way, and produce the purest, healthies form of poultry, so we had to change our business and the way our poultry was produced. We started to breed a different kind of bird, eliminating the antibiotics, preservatives and hormones.”\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tIn a little more than a decade the Pitmans, have built a vertically integrated, family-owned business encompassing feed mill, poultry farms, a sophisticated processing plant, and their own fleet of delivery trucks. They now raise and process organic and natural chickens, turkeys, ducks, geese, and Cornish hens.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe Pitmans believe a lot of little things add up to a great tasting bird. They feed them a vegetarian diet with organic feed from their own mill. Their birds are free of antibiotics, preservatives and hormones. They give them space to roam inside and out, depending on the weather. And during processing, the birds are never soaked in water. Instead, they use their own, one-of-a kind air drying facility.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tIf you visit the Pitman Family Farm, you’ll notice that it’s unusually tidy. Chickens roam freely in an open-door, ranch building, layered with a foot of fresh rice hulls delivered directly from the Sacramento Delta’s rice paddies. There’s air conditioning and running fresh water. Eucalyptus branches are spaced throughout, and there’s no odor.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t“When we made the decision to go it alone, we accepted that there were different types of customers and different types of markets,” David said.  “We have been asked why not all of our birds are organic. We raise as many as we can, but not everyone wants or is willing to pay for their poultry to be organic.”\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tPitman believes society is changing the way we eat. \u003c\/p\u003e\r\n\u003cp\u003e\r\n\t“We are in an enlightened food period now and the demand for products like ours is high. Others are already following our lead.
