Because if you raise the temperature, you’ll change the nutritional quality and the flavor,” Santiago said.\u003c\/span\u003e\u003c\/p\u003e\r\n\u003cp style=\"font-size: 12px;\"\u003e\r\n\t\u003cspan style=\"font-size: 12px;\"\u003eThere is no regulatory definition of what’s considered raw, but truly \u003c\/span\u003e\u003cem style=\"font-size: 12px;\"\u003eraw\u003c\/em\u003e\u003cspan style=\"font-size: 12px;\"\u003e food products must not be exposed to temperatures higher than about 115 degrees so that proteins, minerals and other molecules are not altered. It is most common to find \u003c\/span\u003e\u003cem style=\"font-size: 12px;\"\u003eroasted\u003c\/em\u003e\u003cspan style=\"font-size: 12px;\"\u003e almond butters, which typically have almonds that have undergone the dry-roasting process of more than 200 degrees.\u003c\/span\u003e\u003c\/p\u003e\r\n\u003cp style=\"font-size: 12px;\"\u003e\r\n\t\u003cspan style=\"font-size: 12px;\"\u003eAlmond butter is rich in protein, providing 6 to 8 grams per 2 tablespoons. (A quarter-cup of almonds contains 7.6g of protein, more protein than the typical egg.) Almonds are rich in healthy fats, specifically monounsaturated fats. They are an excellent source of fiber.
